Sund version af risotto

 

For en gangs skyld en risotto uden store mængder af parmesan, ost og smør. Den er dog lige så lækker og en hel del sundere. Denne ret er ikke raw, men et lækkert, sundt og plantebaseret alternativ til traditionel risotto.

 

Til 4 personer

Det skal du bruge

1 skalotteløg
1 fed hvidløg
1 spsk timian
1 spsk sesamolie
4 spsk olivenolie
6-8 portobellosvampe
4 dl økologiske brune risottoris
1 ½ dl hvidvin
1 liter grøntsags fond, lavet på økologisk grøntsagsbouillon
Salt og hvid peber
1 stort bundt persille
Hvid trøffelolie

 

Sådan gør du

Skær svampene i skiver og hak skalotteløg og hvidløg.
Svits løg, svampe og timian i sesamolie.
Tilsæt salt og hvid peber.
Svits indtil det meste af vandet i svampene er fordampet.
Tilsæt ris og hvidvin og lad det koge op.
Tilsæt derefter fond lidt ad gangen. Lad risene absorbere al væden, inden der tilsættes mere. Bliv ved med at røre indtil al væden er tilsat.
Efter cirka 20 minutter opnår risottoen en cremet konsistens og er færdig.
Tag gryden af varmen og tilsæt finthakket persille.
Ved servering hældes forsigtig en lille smule hvid trøffelolie på hver portion.

Italiensk delikatesse i en rå version

 

Er du vild med italiensk mad? Så prøv denne italienske delikatesse i en lækker, rå og plantebaseret version fra Green Goddess. Det er en super nem ret!

 

Til 4 personer

Det skal du bruge

2 courgetter
2 spsk olivenolie
½ tsk salt
1 portion Cream Cheese
1 portion tomatsovs
1 portion pesto

 

Sådan gør du

Skræl courgetterne og skær dem i helt tynde skiver på langs.
Pensl skiverne med olivenolie.
Drys med en lille smule salt på hver skive.
Læg 3 skiver courgette ved siden af hinanden, så hvert stykke overlapper en lille smule.
Fordel 3-4 spsk cream cheese på tværs af courgetterne, og rul dem sammen om ”ostemassen”.
Anret cannellonierne på tallerkenen og kom tomatsovs og pesto over.

Server med grøn salat og enjoy 😉

Green Goddess’ lækre protein bomber

 

Prøv denne opskrift på enestående proteinbomber, som vores søde venner hos Green Goddess har delt med Living Yolates. Raw og vegansk ret lavet af lækre superfoods. Kuglerne er lavet af græskar- og chiaprotein, og er helt eminent som tilbehør til grønne retter eller som snack. Derudover fungerer de som en super erstatning for kød. Proteinindholdet i græskarproteinet er hele 63%!

 

Det skal du bruge

3 spsk græskarkerne-protein
1 spsk chiaprotein
1 spsk tahin
1 spsk mandelsmør (kan udelades eller erstattes af fx. mild pesto)
2 spsk tamari
saften af en 1/2 citron
1/4 – 1/2 dl koldt vand
1 knvs god salt – evt. kalaharisalt
Lidt peber

 

Sådan gør du

Alle ingredienserne røres sammen. Tilsæt vand indtil massen binder. Når ingredienserne udgør en fast masse, formes små kugler, der trilles i letristede sesamfrø. Lav en stor portion og opbevar dem i køleskabet eller i fryseren.

Opskrift

2 æbler

1 stor skive spidskål

1 stor håndfuld grønkål

4 gulerødder

1/2 citron

Press alle ingredienserne i en juicepresser og tilfør lidt hampeolie eller hørfrøolie (ca. 1 spsk) Nyd og lad din krop blive fyldt op med de gode sager fra moder jord 😉

 

 

Gå på bare tæer ude i naturen, i græsset eller på sten! Det gælder også om vinteren, så kan du bare nøjes med at gøre det i ca. 2 min. Blueberry Smoothie

This smoothie is not only fantastic because of its vibrant color, it also contains a full load of vitamins that will help your body stay happy and healthy. It’s perfect for breakfast or as a quick meal during the day – maybe when you need a quick and nutritious meal the most in the afternoon that will scare the hunger pangs off! 

 

Ingredients

1 handful blueberries (fresh or frozen)

1/2 banana

1 small cup of almond milk

1 tbsp chia seeds

A few basil leaves as topping

 

How to

Start by adding water to the chia seeds and leave them to soak in the water for a minimum of 10 minutes (you can easily leave them in the fridge overnight, so they are ready for your early rise smoothie making). Add all ingredients to a blender and blend it to a nice and smooth texture. 

Enjoy this on the run as well by pouring it onto a lidded cup or glass. It’s an easy way to recharge your batteries and get a shot of energy from this healthy blend. Yum!

Wheatgrass and Apple Shot

This little green wonder shot is so full of life, vitamins and antioxidants because of the wheatgrass it contains. The wheatgrass I have used for this shot is a wheatgrass powder that is easy to dissolve in the freshly pressed applejuice. 

Wheatgrass has for years (even as far back as to the ancient Egypt according to Wikipedia) been praised for its nutritional super powers. It stimulates the immune system and will help you stay fresh and healthy. It’s a vitamin bomb and contains vitamin A, C, and E plus it has a high level of potassium.

 

Ingredients

1 tsp wheatgrass powder

1 apple

1/2 lemon (squeezed or juiced without peel)

 

How to

Juice the apple in your juicer. You can either juice the lemon (no peel) with the apple or give the shot a squeeze of lemon as the last step. Dissolve the wheatgrass powder into the applejuice and enjoy this vitamin bomb. SO good for your body!

Use organic ingredients if it’s possible. This will make the shot so much more beneficial.

Infused Water

Infused Water – Lemon – Cucumber – Mint

We all know the benefits to drinking more water everyday – or just to drink the actual amount the body needs. It sometimes seems like a struggle to reach the daily quota 😉 even though you feel like you’re drinking water all the time. It then really helps to “spice” up the flavor a little.

Infused water is a delicious and healthy way to flavor your water and make it seem more interesting to drink. You can infuse water easily with vegetables, spices, herbs, and fruits. I love the classic infused water with lemon slices. If this is too much of a classic for you, please don’t hesitate to experiment and have fun with new combinations of flavour. 

Always remember that organic fruits and vegetables are best to use for infusing, especially if you’re are using fruits or vegetables without peeling them. 

How to make infused water

Use your favourite bottle, glass, or pitcher. Wash the fruit, vegetable, herb or spice that you’re using as flavor thoroughly. Slice the ingredients to make the surface larger from where the taste can enter the water. Use thin slices or small cubes to have the flavor infuse faster. Add the fruit, herbs, or spices to the bottle, then fill it up with water.

Let the water sit for a few hours at least. You can prepare several different bottles of infused water before bedtime and let them infuse overnight. That way you have deliciously tasting water for next day.

You can use water straight from the tap or use filtered water if you have a bottle with filter.

Warming Ginger Shot

Fall is upon us and it might be nice to add a little extra to boost your immune system, prepare your body to resist and fight off the flu, common colds, and discomforts from the colder seasons in general. This warming ginger shot is amazing to take once a day for a whole week, or just when you’re beginning to feel a little under the weather. It will kickstart the immune system and leave you feeling more resistant to virus and the cold. 

 

Ingredients

About 2-3 cm fresh ginger root

1/2 apple

1/4 chili 

A squeeze of lemon

 

How to

Juice all ingredients and pour into a small beautiful glass. Drink it slowly as it might be quite strong both in taste and for your body. Enjoy the heat as it builds and let it flow through your system. This will immediately boost the immune system.

Optionals spices you can add after juicing the above ingredients are; ground turmeric (earthy taste), cayenne pepper (for more spiciness), or a little bit of black pepper. Sprinkle a few goji berries on top if you like to have something to chew on and boost the shot with even more vitamins.

Enjoy a warming shot of health 🙂 and please remember to drink lots of water afterwards. 

Beauty Foods – Raw Cacao Powerhouse Chia Pudding

NOURISH YOURSELF with a RAW powerhouse chia pudding packed with superfoods that contain nutrients, healthy fats & fiber. Chia is hydrating and great before training and gives you long lasting energy.

Nourish your body and mind with this amazing filling RAW Chia pudding. This is my absolute favourite easy-to-do dish and also contains the nourishing BEAUTY FOODS – CHIA SEEDS & RAW CACAO packed with vitamins and minerals naturally.

 

Serves 1 person (always try to use organic chia seeds to get the most nutritional value)

 

Basic milky Chia Pudding with almond milk

INGREDIENTS

2 dl almond (or other nut) milk

1 tablespoon chia seeds

1/8 vanilla extract or ¼ of a vanilla bean

1 teaspoon coconutpalm sirup or sugar (can be left out)

1 glas jar to shake the pudding

 

HOW TO

Combine all ingredients in a glass jar and shake well. Let the mixture set for at least 10 minutes, but ideally 30 minutes. Can be left for some hours or overnight in the fridge, the chia seeds will absorb all the liquids and swell complete to make the consistency firm.

 

RAW Cacao Chia Pudding with coconut water (energizing and hydrating)

INGREDIENTS

2 dl coconutwater

1 tablespoon chia seeds

1/8 vanilla extract or ¼ of a vanilla bean

1 tablespoon raw cacao

1 teaspoon coconutpalm sirup or sugar ( or 1 medjoul date)

1 pinch himlaya salt

1 teaspoon maca

 

Ideas for topping: Almonds, gojiberries, blueberries and chunks of Raw chocolate ( RAWR white lucuma chocolate is delicious to combine with this pudding to make it as an dessert)

 

HOW TO

Blend coconut water, raw cacao, vanilla, himalaya salt, coconutpalm sirup and maca. Blend until it has a smooth consistency. Pour in to a bowl and whisk in the chia seeds. Let the mixture set for 10 minutes, but ideally 30 minutes. It can be left several hours or overnight in the fridge, the seeds will absorb all the liquids and swell complete to make the consistency firm. Stir again before serving.

Serve and top with fresh blueberries or other fresh berries. Combine the two different chia puddings in layers in a glass and serve with your favorite topping.

Chia seeds were originally cultivated by the Aztecs in Mexico. HYDRATE YOURSELF with a RAW, refreshing, hydrating & cooling:

Spicy Watermelon Baobab Gazpacho

Summer is here and it is time to hydrate and cool down your body with this refreshing and RAW Spicy Watermelon Baobab Gazpacho. This is my absolute favourite summer dish and also contains the nourishing BEAUTY FOOD – BAOBAB!

Serves 4 people – Always try to use organic to get the most nutritional value!

 

INGREDIENTS

8 dl Watermelon, seeded and blended

2,5 dl watermelon, diced and seeded. Approx. 1/4 of a big watermelon

2,5 dl cucumber, diced

2,5 dl red bell pepper, diced

2 dl green bell pepper, diced

1 handfull fresh coriander, minced

1/2 white onion, diced

1/2 fresh chili, diced

2 cm ginger, minced

1/2 tsp himalaya salt

Pinch of cayenne powder

2 tbsp baobab powder

Fresh ground pepper

 

HOW TO

Blend the seeded watermelon into a puré and mix in a big bowl with diced watermelon, green and red bell pepper, cucumber, baobab, coriander, ginger, fresh chili, onion and salt. Stir and serve in a chilled bowl with fresh ginger or refrigerate the soup before serving.

Tastes great with RAW crackers. The soup can last 2-3 days in a container refrigerated but tastes best when served right away.

FOODCOMBINING:  Always eat melon as a starter since melon digest very fast in your system. If you mix with other foods, it will start to ferment and cause digestion problems.

SUPERFOOD: BAOBAB is a superfood from the tree of life. Baobab is a source of wellbeing and health.  The baobab powder fruit comes from the fruit pulp of the fruits off the Baobab tree that grows in West Africa. The tree can live for thousands years and the baobab powder is a very valuable wholefood. It is rich in calcium, vitamin C, and is traditionally used in africa for ice cream and refreshing drinks. It can be used as thickener in soups, cakes, smoothies, cold and hot sauces or baking etc.
